This is my Mamaw Betty’s Pineapple Pie recipe. After years of enjoying this pie and family gatherings, I was finally able to get her recipe.
This pie is SO good that our friends and coworkers can’t wait for us to bring back Mamaw’s Betty pies and cakes. (She ALWAYS sends us home with plenty of food to share.)
This is my lovely Mamaw Betty and Yours Truly….
Mamaw Betty is my Mamaw (Southern speak for Grandmother.) I say she is the Paula Deen of Tennessee. She is an amazing cook and does a lot of things from scratch….but this pie is actually pretty easy and is only semi-homemade.
This recipe makes 2 pies !As far as pies are concerned, these are fairly inexpensive to make. I have about $10 invested in two pies or $5 per pie. (You can check for coupons here) Plus, these pies are quick and easy to make too.
2 Graham Cracker Pie Crust
1 Cup of Sugar
1 Small Can of Pineapple (drained)
1 Block of Cream Cheese
1 Box of Lemon Gelatin
1 Tub of Whipped Topping (softened)
1 Cup of Water
Bring one cup of water to a boil. In a large bowl, add the boiling water and lemon gelatin. Stir. Add Sugar and stir. Stir until both are dissolved.
Add the cream cheese. Mix. (I used a handheld mixer)
Mix in drained pineapples. (You want to be sure to drain and mash all the water out of the pineapples before adding it to the mix.)
Add one tub of whipped topping and mix well. (I used a handheld mixer.) Whip until fluffy.
Pour into pie shells. Cover. Refrigerate. This pie needs a couple hours to set.
Store in refrigerator until you are ready to enjoy!
