Microwave Mug Cake: Pumpkin Spice Cake with Sugar Maple Glaze


I have been hearing about 1 Minute Microwave Mug Cake. So I decided to give it a try…with some tweeks for the Season.


Microwave Mug Cake

3-2-1 Cake is cooked inside a Coffee Mug in the Microwave. It cooks in about a minute and makes 1-2 servings. It is a quick and easy treat…and very inexpensive….especially compared to the pre-pakaged microwave single serving cakes. The secret is the Angel Food Cake Mix. You gotta have that it or your cake will not rise. You can use the regular cake mix of choice. For my recipe I used Spice Cake.


1 Minute Microwave Mug Pumpkin Spice Cake Ingredients

1 box Duncan Hines Angel Food Cake Mix

1 box any flavor regular Cake Mix

2 tablespoons water

Pumpkin Puree (to taste)

Pumpkin Pie Spice (to taste)


Baking Instructions

Mix the 2 cake mixes together in a gallon zip-lock bag. Give is a good shakes so that it gets mixed well.

For a single serving take 3 tablespoons cake mix; mix this with 2 tablespoons water; Mix together. (Double this for a bit larger of a serving)

Add 1/2 Tablespoon of Pumpkin Puree (more or less to taste *) and a pinch of Pumpkin Pie Spice. (You can make it yourself if you don’t have it on hand)

Microwave for 1 minute. Let this rest for 15 minutes and serve with toppings.


Sugar Maple Glaze Recipe

I cup of Powdered Sugar

I T. of Butter Softened

1/2 t. of Vanilla

1/4 cup of Maple Syrup

Splash of Milk

Mix all ingredients together until blended

* The more pumpkin puree you add the more pumpkin pie texture and less cake texture you will get.

Remember microwave wattage does vary…so depending on your microwave you may need to microwave more or less than 1 minute.

Also, I tried lining the mug with a cupcake liner and it was a total no-go. I did use a small glass bowl (instead of a coffee mug) and it did work well.

Also, as far as the dry mixture, I read that you can place one whole bay leaf in the bottom of the bag or container and refrigerate. Will last for up to 6 months and the bay leaf flavor will not do anything to the mix.

Personally I am storing mine in an airtight container.
