Three words- POTATO CHIP COOKIES. Don’t mind if I do. This is a Southern recipe! These are super simple to make and require only a handful of ingredients. These cookies are not hardy and robust, but rather buttery and delicate.
Potato Chip Cookies Ingredients:
2 Sticks of Butter
1/3 Cup of Sugar
1 2/3 cup of All-Purpose Flour
1 Cup of Crushed Potato Chips (Plain with Ridges)
1/4 cup of Powdered Sugar
1 teaspoon of Vanilla
Preheat oven to 325 degrees. Line 2 baking sheets with parchment paper.
In a large bowl, whip the sugar and butter with an electric mixer until the mixture is fluffy.
Add the flour and mix well. Add Vanilla and mix.
Add the the potato chips and mix by hand.
Drop rounded spoons of the dough onto lined cookie sheets approximately 2 inches apart.
Bake approximately 15 minutes (give or take) or until the cookies are light golden brown around the edges.
Allow to cool for 5 minutes on the cookie sheets and then carefully transfer to a wire rack for cooling.
Sift powdered sugar onto the cookies. (Don’t be stingy)
These are so light, buttery and delicious!
