If you love peanut dressing- you must try this recipe! My friend Slim said I could share her recipe with you! This is a must for your recipe box. If you don’t have time to jot it down, be sure to pin it for later.
Slim’s Famous Peanut Dressing
1/2 c creamy peanut butter
1/3 c reduced sodium soy sauce
1/3 c rice wine vinegar
1 Tbs fresh, grated ginger root (or more to your taste)
1/4 c mayonnaise
2 Tbs fresh, chopped cilantro
1 packet Stevia (to taste)
1/4 tsp Sriracha hot sauce (optional)
Mix peanut butter, mayo & soy sauce together. (My five year old “helped”. How does one almost miss a bowl this large?)
Add in cilantro & ginger
Add rice wine vinegar
Add Stevia (Add it slowly and taste the dressing before adding the whole packet.)
Add the Sriracha (This is optional, I like just a hint of spiciness!) Mix well.
There you have it! This is a thick dressing. If you like a thinner dressing you can thin it out by adding a little more Rice Wine Vinegar.
